🛒 Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1/2 cup water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (10.75 ounces) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded Colby Jack cheese, divided
  • 1 bag (9.75 ounces) Nacho Cheese Doritos, crushed
  • Optional toppings: shredded lettuce, diced tomatoes, sliced jalapeños, extra sour cream, salsa

Step-by-Step Instructions

  1. 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

  2. 2

Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat.

  3. 3

Stir in the taco seasoning and 1/2 cup water. Bring to a simmer and cook for 5-7 minutes, or until the liquid has mostly evaporated and the beef is well seasoned. Remove from heat.

  4. 4

In a large bowl, combine the rinsed black beans, pinto beans, cream of chicken soup, sour cream, and milk. Mix well until smooth and thoroughly combined.

  5. 5

Spread the seasoned ground beef evenly across the bottom of the prepared baking dish.

  6. 6

Pour the bean and soup mixture over the ground beef layer, spreading it evenly.

  7. 7

Sprinkle 1.5 cups of the shredded Colby Jack cheese over the bean mixture.

  8. 8

Evenly sprinkle the crushed Nacho Cheese Doritos over the cheese layer. Press down gently to help them adhere.

  9. 9

Bake for 20-25 minutes, or until the casserole is bubbly around the edges and the Doritos topping is golden brown and crispy.

  10. 10

Remove from oven and sprinkle with the remaining 0.5 cup of Colby Jack cheese. Let stand for 5 minutes to allow the cheese to melt and the casserole to set slightly before serving.

  11. 11

Serve hot with your favorite taco toppings like shredded lettuce, diced tomatoes, salsa, and extra sour cream.
